Authentic “Zheng Shan Xiao Zhong” (Lapsang Souchong) from the stunning UNESCO heritage site Wu Yi Mountains in Fujian Province is rarely available outside of China. This superbly light and elegant tea with a slight smokiness and a distinctly deep oaky flavour from Tong Mu Guang is a complete contrast to the more assertive and smoky Tarry Lapsang Souchong that most people know. With a slender, even leaf that has been fully oxidized and simultaneously smoked and fired in special smoking sheds in the same area that the bushes grow, this is a rare tea that has to be tried to be believed – think of the best peaty malt whisky you have ever tried, add hints of toasted pine-nuts, plums and cinnamon and then double the pleasure. This is one of just a few black teas that can be infused more than once. We recommend preparing this tea gong fu cha style or if you don’t have the equipment, trying two – three infusions, using about 12g of leaf for 1 liter of water that has just boiled, steeped for 3-5 minutes.
