The tea drunk on the streets of Kolkata is Chai Masala: A strong black tea to which spices are added. Introduced when the British were in India, the original idea was that tea on the streets would be drunk in the British fashion with a splash of milk and teaspoon of sugar. The chaiwallahs (tea vendors) had other ideas and preferred to serve their tea spiced and very sweet, mixed with buffalo milk. Our tribute to Kolkata, this chai blend tastes wonderful drunk plain.
