Organic Marimo Mie (Hayashi) Yamanoka Kabusecha
From the Yamanoka area of Mie Prefecture, this soft and mellow tea reflects the area in which it grows, where green fields follow the contours of low, rolling hills, bordered by forest and open sky. The Hayashi family – one of the first tea producers to switch to organic farming in Japan – has worked this beautiful land for generations, maintaining a small-scale approach that keeps them closely connected to both the plants and the seasons.
The local terroir is gentle but distinctive: clean air, steady sunlight, and soils that drain well after rain. These conditions support even, healthy growth, allowing the leaves to develop a balanced and expressive character. Prior to harvest, the plants are partially shaded, a method that brings together freshness and softness in equal measure.
Yamanoka Kabusecha has a very inviting fragrance – green, slightly sweet, and reminiscent of young spring growth. On the palate, it is well balanced and harmonious, with a light umami presence and a subtle grassy brightness. Easy to prepare and drink, there is a natural ease to the cup, with a faint briskness at the finish that keeps it lively without becoming bitter.
This is a tea that is rooted in its place and its maker, offering a sense nature, continuity and care in each infusion.
The leaves for Yamanoka Kabusecha come from the Sayama Kaori tea plant, which sprouts fairly late at the beginning of May. After two weeks of shading, in the middle of May the leaves are harvested and transported to the factory to be processed as quickly as possible. After deep steaming the leaves (fukamushi) and further processing, the tea is packed and stored in very cold conditions until it is sent to Europe.
