Organic Otsuka Matcha Okumidori & Shunmei, 30 g caddy

We are delighted to introduce another amazing organic ceremonial matcha from the company Otsuka in Kakegawa, Shizuoka. Having had the pleasure of visiting their tea factory, we were able to see first-hand the extraordinary care and craftsmanship that the Ostuka family and team apply to their work. As great admirers of their loose leaf teas, and following on from how well their organic Oku Midori Ceremonial matcha was received by our customers, we feel very honoured to be able to share this – and one other, their Kanayamidori & Yabukita blend, with you.

This rare organic Otsuka Ceremonial Matcha Okumidori & Shunmei is made from a blend of two carefully selected cultivars:

The Okumidori cultivar is highly prized among tea masters for its naturally deep green colour, smooth texture and pronounced sweetness. Known for its low bitterness and high amino acid content, Okumidori produces matcha with a rich umami character and an exceptionally creamy, rounded mouthfeel.

The Shunmei cultivar is far less common and particularly valued for its aromatic elegance and soft, floral complexity. It brings lift, freshness and a delicate fragrance to the blend, adding an expressive and slightly refined floral dimension that beautifully complements Okumidori’s depth and sweetness.

Together, these two cultivars create a matcha that is both rich and refined. The powder displays a vibrant, luminous green colour, whisking into a smooth, jade-toned bowl with a fine, creamy foam. The aroma is fresh and inviting, with notes of spring greens, soft florals and gentle sweetness.

On the palate, Organic Matcha Okumidori & Shunmei is smooth and well-balanced, combining deep umami richness with a naturally sweet, almost creamy character. Okumidori provides body, depth and structure, while Shunmei adds aromatic lift and elegance, resulting in a harmonious and layered cup with very low bitterness.

The finish is clean, long and gently sweet, leaving a lingering impression of soft umami and floral freshness. A rare and expressive ceremonial matcha, it is ideal for those seeking something distinctive beyond the more commonly seen single-cultivar styles.

Otsuka’s matcha teas are a tribute to tradition and a reflection of their innovative spirit, offering the perfect choice for those who take their matcha seriously! For us, their teas capture the essence of what makes Japanese tea so enchanting: a harmony of craftsmanship, heritage and unforgettable flavour.

To prepare “thin” Matcha (Usucha) in a Matcha Bowl (Chawan): 

  • Put 1.5 – 2g (2 matcha scoops) into your matcha bowl. If necessary, sieve the matcha into the bowl to remove lumps.
  • Add ca. 80 ml of water that has been heated to 70 – 80℃.
  • Whisk using your matcha brush until small bubbles appear – your Usucha will have the consistency of a strong espresso with a nice foam on top.

To prepare “thick” Matcha (Koicha) in a Matcha Bowl (Chawan): 

  • Put 3.5 – 5g (3 heaped matcha scoops) into your matcha bowl. If necessary, sieve the matcha into the bowl to remove lumps.
  • Add ca. 20 – 40 ml of water that has been heated to 70 – 80℃.
  • Stir the matcha into the water using your matcha brush until it has the consistency of thick, melted chocolate.

Because Matcha in such a highly concentrated form as Koicha takes some getting used to and only real premium qualities reveal their sweet and complex character when prepared this way, we recommend that only the highest-quality teas be prepared as Koicha. Having said that, how you like your tea is down to your individual taste. Although we wouldn’t recommend trying more basic Matcha teas as Koicha, we would recommend preparing the premium quality teas both as Usucha and Koicha to see which style of Matcha you prefer.
