Also known as Yunwu Tea, Tian Mu Qing Ding is a rare and refined organic Chinese green tea from the misty Tian Mu Mountains in Zhejiang. The young leaves are carefully hand-picked in early April and worked with extraordinary care to preserve their freshness and character.
The beautiful leaves are elongated, slightly twisted and lush green, with a clearly recognisable leaf structure. Their needle-like shape and aromatic fragrance are typical of high-quality spring harvest teas. Produced with an artisanal method, the leaves are gently moved back and forth in hot cast iron pans, never pressed. This technique preserves their delicate structure and brings out both their natural beauty and refined flavour.
When brewed, the infusion is brilliant and crystal-clear, glowing with a soft yellow-green hue.
In taste, Tian Mu Qing Ding is pleasantly mild and balanced. It hardly turns bitter, offering instead a fine interplay of gentle sweetness and refreshing herbaceous notes. The shape of the leaves is said to resemble the necks of dragons, long seen as protectors and bringers of good fortune in Chinese culture.
