Katie Yen’s Honey Scent Black Tea
Similar to Oriental Beauty Oolong, the leaves used to make Katie Yen’s Honey Scent Black Tea have been carefully selected to make sure they have been bitten, by tiny leaf hoppers (Jacobiasca Formosana) just before harvest. This “attack” from the insects triggers the plant’s defences, creating a natural oxidation and causing a sweet, honey flavour to develop.
Another similarity to Oriental Beauty is that this tea is suitable for making over multiple infusions in a gaiwan. Our recommendation for preparing over multiple infusions is to heat the water to 90°, make a first infusion of 1.5 minutes, a second, shorter infusion of just under a minute and subsequent infusions of 1.5 minutes until you notice the taste start to weaken.
