Description
Schell Dark Chocolate Kalimantan, 71 % Cocoa
Produced from rare cocoa grown in the rainforests of Kalimantan on the island of Borneo, Schell Dark Chocolate Kalimantan 71% combines exceptional flavour with a remarkable sustainability story. Made from the nearly forgotten “White-Breaking” cocoa variety, this is a dark chocolate of distinctive character and origin.
The cocoa for this chocolate is cultivated as part of a reforestation project in partnership with Fairventures and supported by Brot für die Welt. Around 160 farming families who previously relied on palm oil cultivation now grow cocoa in diverse agroforestry systems, helping to restore rainforest ecosystems while creating sustainable livelihoods.
A Complex Aromatic Profile
Schell Dark Chocolate Kalimantan 71% has a bright and expressive flavour profile that reflects the unique character of its Indonesian cocoa. Intense notes of ripe passion fruit form the centrepiece of the tasting experience, supported by delicate cocoa aromas and a gentle natural acidity.
The chocolate is remarkably smooth for its cocoa content, with a balanced structure and a long, elegant finish. Its fruity freshness and subtle complexity make it particularly approachable while still offering plenty of depth for experienced chocolate enthusiasts.
Unique Origin – Cocoa from the Rainforests of Borneo
The cocoa used for this chocolate originates in Kalimantan, the Indonesian part of Borneo, one of the world’s most biodiverse regions. The rare cocoa variety used in this bar was selected from old cocoa trees and rescued from near extinction.
Because cocoa naturally thrives beneath the forest canopy, it is ideally suited to agroforestry cultivation. Grown among native trees rather than in monocultures, the cocoa contributes to biodiversity, soil protection and rainforest restoration. The careful fermentation and processing of the beans help preserve the cocoa’s vibrant fruit character and aromatic clarity.
Pairing Recommendations
Traditionally enjoyed with medium-bodied red wines, this chocolate also pairs beautifully with tea. We find that the Amba Estate hand-picked tea with flowers pairs perfectly with the chocolate’s exotic passion fruit notes, while a lightly roasted oolong such as the Thailand soft stem oolong creates an appealing contrast between the chocolate’s bright fruitiness and the tea’s warm, nutty character. For a particularly refreshing and surprising combination, try it with a high-quality Gyokuro, whose vibrant vegetal notes harmonise surprisingly well with the chocolate’s tropical fruit profile.
