Harvested in early spring and finished a few weeks later (once the jasmine plants blossom), this tea is made by hand-rolling the humidified leaves into perfect little “pearls” which are then laid out on trays. The trays are then placed on racks alternating with trays of jasmine blossom (which are exchanged for fresh blossoms every day). The pearls stay in this sweet scented enclosed space for several days, until they are suffused with jasmine flavour. This is a wonderful example of a hand-made Chinese tea. Just a few pearls give a highly fragrant, refreshing liquor which is soft and sweet with creamy, floral undertones.
