Marimo Miumori Kirishima Sencha
The Hayashi family tea garden, run by Shutaro Hayashi, his brother Kenji and their father Osamu, is nestled in the misty mountains of Kirishima in Kagoshima Prefecture on Kyushu, far down in the South of Japan. Although the lead has been taken over by Shutaro, the whole family is involved in the business: Shutaro, his brother and father oversee cultivation and production, while his mother and sister run the farm shop and office.
Kirishima is a region known for its frequent mist (with “kiri” meaning “mist” and “shima” meaning “island”). This gives the mountains the appearance of small islands in a sea of fog, which explains how the landscape got its name.
The Hayashi tea garden produces an ever increasing variety of high-quality teas, including the popular Asamushi Kanaya Midori Sencha and one of our best-selling teas, their Tokujou Sencha.
Miumori Kirishima Sencha is made from a combination of intensely (fukamushi) steamed and lightly (asmushi) steamed leaves from seed-grown tea bushes which were planted five generations ago. The intensely steamed leaves give this tea a smooth, rounded flavour and sweetness, while the less intensely steamed leaves add an enjoyable depth of flavour. As the two types of leaf open at different times when they come into contact with warm water, both the first and second infusions are delicious.
Fans of other ‘Hayashi’ teas, especially the much loved “Marimo Sencha” should note that Kirishima Miumori Sencha is made a different producer (“Hayshi” is a relatively common surname in Japan) and that is why many of Shutaro and Kenji’s teas have the term “Miumori” included in their name.
Note: The term “Miumori” was made up by the family and roughly translates to “Forest of the Beautiful Cormorant”. “MI” stands for beautiful’, “U” for ‘cormorant’ and ‘MORI’ for ‘forest’ – a term that perfectly captures the enchanting, mist-shrouded beauty surrounding the Hayashi tea gardens in Kirishima.
