While in most languages the word, or a variation of the word “marmalade” simply means jam, in Britain it is always a citrus based preserve containing peel. Although Paddington Bear would beg to differ and would no doubt eat marmalade sandwiches at any time of day, we Brits would never dream of eating marmalade any other way than on our toast in the morning.

Description

As a young girl Kate Bridges worked in service for respectable families in the countryside of Victorian England.  A talented and creative cook, as her career progressed she became cook to one of London’s leading Edwardian families Lady and Richard Bellamy. During her time at 165 Eaton Place, London SW1, she was known as Mrs Bridges and devised elaborate menus and cooked for some of the leading figures in the capital including the Monarch King Edward. From the early days of her working life Mrs Bridges collected recipes and in 1905 she published a book called “Practical Household Cookery”.  The marmalades and preserves in the modern Mrs Bridges range, presented in pretty oval jars with a traditional mop cap and bow use only the finest ingredients and are based on the recipes in Mrs Bridges’ book.

Mrs Bridges was immortalised in the long running 1970’s series ‘Upstairs Downstairs’ (known in Germany as “Eton Place”), where, along with the Butler Mr Hudson, she reigned “downstairs.”

In Britain marmalade is a citrus based preserve containing peel and is a quintessential part of a traditional full English breakfast. This selection of marmalades and preserves includes both marmalade and preserves: Take your pick from fine cut marmalade “pure”, the same with ginger or champagne,  raspberry and redcurrant preserve, strawberry preserve with champagne, blackcurrant jam or luxurious (and addictive) lemon curd.

Fine Cut Marmalade: Sugar, oranges, orange juice (from concentrate), lemon juice (from concentrate), gelling agent: fruit pectin, orange oil, acid: citric acid. Made from 35g fruit per 100g. Marmalade with Ginger: Sugar, oranges (30%), ginger (5%), gelling agent: fruit pectin, lemon juice (from concentrate), acidifier: citric acid. Made from 35g fruit per 100g. Marmalade with Champagne: Sugar, oranges, lemon juice (from concentrate), Champagne (0.7%), Marc de Champagne (0.3%), gelling agent: fruit pectin, acidifier: citric acid. Made from 35g fruit per 100g. Raspberry and Redcurrant Preserve: Sugar, Raspberries (30%), redcurrants (15%), gelling agent: fruit pectin, acidifier: citric acid. Made from 45g fruit per 100g. Strawberry Preserve with Champagne: Sugar, strawberries, champagne (0.7%), Marc de Champagne (0.3%), acidifier: citric acid, gelling agent: fruit pectin. Made from 45g fruit per 100g. Blackcurrant Preserve:  Sugar, Blackcurrants, gelling agent: fruit pectin, acidifier: citric acid. Made from 45g fruit per 100g. Lemon Curd: Sugar, whole egg (pasteurised), modified corn starch, butter (from milk), lemon juice (from concentrate) (3%), gelling agent: fruit pectin, acidifier: lemon oil (0.2%), emulsifier: E475.
