This exceptional Sencha is harvested from Yabukita tea bushes grown in a secluded, woodlandside tea garden with a unique microclimate that allows the tea leaves to mature about a week earlier than usual. Unusually for sencha, the leaves are plucked in the afternoon and left to wither in the open air overnight before being processed the next day. This gives the tea a deep, long-lasting flavour and a distinctive aroma reminiscent of a mossy forest floor.
The Hayashi family tea garden, run by Shutaro Hayashi, his brother Kenji and their father Osamu, is nestled in the misty mountains of Kirishima in Kagoshima Prefecture on Kyushu, the southern island of Japan. The whole family is involved in the business: Shutaro, his brother and father oversee cultivation and production, while his mother and sister run the farm shop and office.
Kirishima is a region known for its frequent mist (with “kiri” meaning “mist” and “shima” meaning “island”), gives the mountains the appearance of small islands in a sea of fog, which is how the landscape got its name. The Hayashi tea garden produces a variety of high-quality teas, including the popular Asamushi Kanaya Midori Sencha and one of our best-selling teas, their Tokujou Sencha.
Organic Yoru no Ka Sencha is a full-bodied green tea with a balanced character, subtle sweetness, delicate mineral notes and floral undertones. The dried leaves give off a captivating aroma of ripe berries, while the brewed tea has a crystal clear pale green colour.
