Spring marks the beginning of the new tea harvest in many regions. The young, fresh teas are in great demand and eagerly awaited by tea lovers around the world every year. And the fresh new green teas from the first harvest of the year are a special treat when made into green tea iced teas!

Green tea is particularly suitable for a refreshing cold drink.
There are several ways to prepare iced tea. In this article, we suggest a quick and easy way to make refreshing, delicious iced green teas from Japan, which are particularly suitable because of their wonderful sweetness and delicate flavours.
Here is our preparation recommendation for 400ml of green iced tea:
6-8g of Japanese Sencha
200ml of filtered water
200ml of ice cubes (if possible made with filtered water)
Pour 200ml of 70°C water over the tea and leave to infuse for 3 minutes. This concentrated tea is then poured through a sieve directly onto 200g ice cubes. As the temperature of the tea is not very high, the ice will not melt completely as it cools, leaving some ice cubes in the glass. The cold green tea can then be enjoyed immediately.
A speciality is “shincha” (Japanese 新茶, new tea), which in Japan is only produced in spring from the youngest and finest leaves of the tea plants and tastes particularly sweet. As the young leaves used for shincha have been exposed to less sunlight than other teas, they contain a higher level of amino acids, which contribute to the unique umami flavour and smoother taste of the tea.

As a general rule, green tea should not be brewed too hot so that it does not become bitter. We recommend a water temperature of 70 – 80° C and a brewing time of 2-3 minutes for the preparation of green tea.
Another Japanese delicacy is Kouridashi ( 氷出し ), a very slow and careful method of preparing iced green tea. Pour approx. 6g of loose Sencha e.g. organic Morimoto Kabusecha, a fine, shaded tea or Shincha into a small pot and place 100ml of ice cubes on top – we recommend using filtered water for the ice cubes. It takes a little patience for the ice to melt, but with little effort you will get an incredibly intense, cold green tea and we promise you a fantastic flavour experience.
